IT IS STILL ALL ABOUT THE STRAWBERRIES
I just thought I would send you a quick note with another delicious strawberry recipe! Yes, I am still obsessing over them! Seriously what is there not to love? They are packed full of nutrients to help us with the challenges of fatigue and inflammation, defntiely something we all need a little help with. Your certain to benefit with the addition of this Vitamin C rich fruit in your diet which will provide you with much needed Vitamin C, disease protecting Phytochemicals and Fibre.
Oh, I almost forgot they are now which in season now here in Ontario, so if you can fit it into your busy schedules it is always fun to visit your local strawberry farm for your harvest. Shopping local supports the local farmers and their families, giving you an opportunity to purchase consciously and sustainably. Eating local and organic foods is win situation for all!
SWEET STRAWBERRY OATMEAL Serves 2
3/4 Cups Steel Cut Oats or Regular Rolled Oats - Preferably Gluten Free - *Rinsed & Soaked is optimal, if you don’t have time for soaking be sure to rinse*
2 Cups Water
1 Tsp Cinnamon
1 Tbsp Flax Seeds
2 Tsp Coconut Oil
1 tsp Maple Syrup
1 Cup Strawberries
Pinch of Sea Salt
Top with Maple Syrup, 1 Tbsp Hemp Seeds & 2 Tbsp Granola
Almond Mylk
In a small pot combine the soaked and rinsed Oats, Flax Seeds, Cinnamon, water and salt. Rinsed and Soaked is optimal for nutrient absorption, if you don’t have time for soaking be sure to rinse well. Bring the mixture to a boil, stir, cover, reduce to low and simmer for 10-15 minutes, stirring often to avoid the oats sticking to the bottom of the pot. Add the strawberries and stir for another minute or two. Stir in the coconut oil, add a generous splash of Maple Syrup or your favourite sweetener and almond mylk., Top with more sliced strawberries, granola, hemp seeds and enjoy!
P.S. I love a lot of berries in my oatmeal so adjust to your liking.
